MAKING HOT TEA

GREEN TEAS: First Infusion (first steeping)  Use 3 gm. of green tea for every 8 ounce cup, traditional Chinese tea pot, or tea infuser. Pour hot water over leaves, cover and let steep for 2-3 minutes. Pour the tea into a cup or a vessel and enjoy sip by sip.                                                                                 Further infusions   After the first cup of tea, you can continue to add hot water at least 1 or 2 more times to the same tea leaves during the same day. OOLONG TEASRegular Style - Use 5-6 gm. of tea per pot. Pour water over leaves and let steep for 5 minutes. Pour the tea into cup or vessel. Repeat for 4-5 more infusions.                                                                                      Gong Fu Style - Use 9-12 gm. of tea per pot. Pour water over leaves, cover and let steep for 1 minute. Pour the tea into a cup or vessel and enjoy sip by sip. Repeat numerous times (8-12 infusions).                                                         Practical Style - Use 5-6 gm. of tea in cup or tumbler. Pour hot water over leaves and steep for about 5-10 minutes. Begin to drink the tea. Continue to top off your cup with more water (room temperature is O.K.), when it becomes half full. Repeat 4-5 times during the day. You will have your tasty tea all day long.
Discard used tea leaves after 12 hours, as they will begin to spoil!
